No.
These are rare random drops from the corresponding Mythic dungeon bosses:

- Sharkbait — Harlan Sweete in Freehold
The included kills provide eligible drop chances but cannot guarantee any of these three mounts. Additional attempts may be required after the weekly dungeon reset.

No.
The required profession interactions can be completed by different eligible party members. The dungeon group is organized to cover the profession-based encounters in Waycrest Manor and Siege of Boralus; your character does not need to personally possess every profession.
